White Spinach Queso

Ingredients

1 tablespoon olive oil
½ cup diced white onion diced
1 seeded and diced jalapeno
12 ounces shredded white American cheese,
4 ounces shredded pepper jack cheese
⅔ cup half and half
1 (15-ounce) can diced tomatoes with green chiles, drained
2 cups chopped fresh spinach
½ cup chopped fresh cilantro

Instructions

In a large skillet, heat the 1 tablespoon olive oil over medium heat. Add the ½ cup diced white onion and 1 seeded and diced jalapeno and saute until tender. Add the 12 ounces shredded white American cheese, 4 ounces shredded pepper jack cheese ⅔ cup half and half, and continue stirring until melted.
Add the 1 (15-ounce) can diced tomatoes with green chiles, 2 cups chopped fresh spinach, and ½ cup chopped fresh cilantro and stir well. Transfer to a serving dish and serve with tortilla chips.
