Ingredients

4 thinly sliced chicken breasts
salt and pepper to taste
1 tablespoon Italian seasoning
2 tablespoons unsalted butter
8 ounces sliced mushrooms
½ cup chicken broth
½ cup shredded mozzarella cheese
fresh chopped parsley for garnish

Instructions

Preheat the oven to 375 degrees Fahrenheit. Salt and pepper 4 thinly sliced chicken breasts and evenly season with 1 tablespoon Italian seasoning.
In a large skillet over medium-high heat add 2 tablespoons unsalted butterr. Cook and brown each side of the seasoned chicken breasts and place in a 13 x 9 x 2-inch baking dish.
Returning to the skillet add 8 ounces sliced mushrooms and ½ cup chicken broth. Simmer until tender pour over the chicken in the baking dish.
Bake uncovered for 15 minutes. Top with ½ cup shredded mozzarella cheese cheese and bake an additional 5 minutes until the cheese is melted and the chicken is cooked throughout. Garnish with fresh chopped parsley for garnish
