Ingredients

8 slices chopped bacon
1 pound cubed boneless skinless chicken breast
salt and pepper
2 cups chicken broth
2 cups half and half
1 (1-ounce) package dry ranch seasoning
8 ounces uncooked penne pasta
2 cups chopped broccoli
1½ cups shredded mozzarella cheese
chopped parsley for garnish

Instructions

In a medium sized skillet over medium high heat, cook 8 slices chopped bacon until crisp about 3-4 minutes. Remove with slotted spoon and then set aside on a plate. Add 1 pound cubed boneless skinless chicken breast and season with salt and pepper. Cook until brown and no longer pink 3-4 minutes. Set aside on the plate. Drain the remaining grease.
Add 2 cups chicken broth, 2 cups half and half, 1 (1-ounce) package dry ranch seasoning to the skillet and whisk. Add 8 ounces uncooked penne pasta and 2 cups chopped broccoli then bring to a boil and cover. Reduce temperature to medium and allow to simmer for about 10 minutes or until the pasta is tender.
Stir in 1½ cups shredded mozzarella cheese and chicken and stir until cheese is melted and heated through. Top with chopped parsley for garnish if desired.
