Ingredients

6 anchovies in oil
2 egg yolks*
3 garlic cloves
¼ cup lemon juice
2 teaspoons dijon mustard
½ cup olive oil
½ cup grated parmesan cheese

Instructions

In a food processor add the 6 anchovies in oil, 2 egg yolks*, 3 garlic cloves, and ¼ cup lemon juice. Pulse until smooth and creamy.
Add in the 2 teaspoons dijon mustard, ½ cup olive oil, and ½ cup grated parmesan cheese. Continue to pulse until smooth.
Serve right away or store in an airtight container in the fridge.

*If you don't want to use raw eggs, greek yogurt or mayonnaise is a good substitute.
