Cheesy Pepperoni Bombs

I love pepperoni so much I sometimes eat it straight from the package AND I admit, Iโ€™ve been known to steal the pepperoni off of my husbandโ€™s pizza slices when heโ€™s not lookingโ€ฆ am I a terrible wife?? I just love it, and CHEESE. A classic pepperoni pizza always sounds good.

Cheesy Pepperoni Bombs

These cheesy pepperoni bombs are perfect for a snack or appetizerโ€ฆ or if youโ€™re like me, for dinner!

Ingredientsย 

  • 1 (16-ounce) tube refrigerated biscuits
  • 3 mozzarella cheese sticks cut into 6 pieces, 18 total pieces
  • pepperoni slices
  • 2 tablespoons olive oil
  • ยฝ teaspoon garlic powder
  • 3 teaspoons Italian seasoning
  • ยฝ cup grated parmesan cheese

Instructionsย 

  • Preheat oven to 400 degrees Fahrenheit and lightly spray a baking sheet with non-stick cooking spray.
  • Cut the 1 (16-ounce) tube refrigerated biscuits in half so there are 16 biscuits, then flatten each piece. Place 2 pepperoni slices and one piece of the 3 mozzarella cheese sticks cut into 6 pieces, in the center of a biscuit.
  • Fold and pinch the edges together to seal the pepperoni and cheese inside. Repeat with remaining biscuits, pepperoni slices, and cheese.
  • Place 2 tablespoons olive oil in a small bowl. In another bowl stir together ยฝ teaspoon garlic powder, 3 teaspoons Italian seasoning, and ยฝ cup grated parmesan cheese.
  • Dip the top half of each biscuit into the olive oil, then roll in the parmesan mixture.
  • Place the biscuits on the prepared baking sheet and bake for 12-15 minutes until golden. Serve warm.
